Healthier Macaroni & Cheese Recipe
Often times macaroni and cheese recipes contain cream, butter and other high fat ingredients. While I feel it is important to stick with a quality “regular” cheese certain items can be removed or replaced with healthier alternatives for a great tasting mac and cheese recipe. I do want to note that this recipe is a healthier alternative - that does not make it health food
This recipe was recently developed after creating a cheesy gratin potato recipe that used tillamook cheese, white wine and chicken stock. Another trick to creating a healthier pasta dish is to use “whole wheat pasta” which is less fattening than regular pasta.
Ingredients:
3 tablespoons flour
3 tablespoons butter
1 can low sodium chicken broth
3/4 cup white wine
8 ounces extra sharp tillamook cheddar cheese (grated)
one box (15 ounces) elbow Macaroni
cayenne pepper (as needed)
kosher salt (as needed)
fresh ground black pepper (as needed)
chili powder (as needed)
Enjoy,
Chef Brian
