House Marinade: Chipotle & Lime
Soon out of culinary school I started to explore ethnic cuisines and ingredients. I found myself reading lots of cook books about Asian and Mexican cuisine, I really enjoyed the bold flavors of Mexico, China, Japan and other far away places. While I was quite versed in French cooking I was drawn to these new flavors.
This simple but tasty recipe is a standard at home, my wife and I use this tasty marinade to flavor chicken, pork, salmon as well as steak. It is important to use fresh lime juice however you can substitute fresh lemon juice in a pinch.
Ingredients:
Juice of fresh lime
Pure of Chipotle Peppers In Adobo Sauce
This recipe is to be modified and played with by you, if you like really spicy food then add a lot of chipotle puree. I sometimes add a bit of soy sauce when grilling meats like pork and beef, the saltiness is a great addition.
